DESIGNATION : A.O.C. Saint Veran, Cru de Bourgogne WINE NAME : Saint Veran on a small slope of the village of Chasselas EXPOSURE : Southwest VINES : 20 to 50-year-old vines. Guyot training along lateral wires. Plowed between the vines. A very nice parcel bordering the Pouilly Fuissé appellation. In order to best respect the environment, treatment is minimal depending on the yearly conditions. WINEMAKING PROCESS : The grapes are pressed after 1h30 of maceration. Settling is brought about by a low temperature of 4°C (40°F). For three weeks, first vinification takes place in the vat and the second in oak casks for a minimum of 9 months depending upon the vintage. New oak barrels are not used for this wine; the newest barrels have been used three times and the oldest nine times. The goal is to bring roundness to the wine without a pronounced taste of oak. The winemaking process is accomplished with a minimum of additives such as sulfits. BOTTLING : The wine is filtered, bottled, and labeled by our enterprise. TASTING AND CONSUMPTION : To be served from 7°-10°C (45°-50F) with fish, shellfish, fowl and it is very interesting with foie gras. WINE-MAKER ADVICE : This is a full and aromatic wine with aromas of apricots and citrus fruits married with the fine flavors of the oak cask. Its color is a very pretty, lightly golden yellow. It is a dry wine without residual sugar. AGEING POTENTIAL : 5 years (depending on the vintage) ALCOHOL CONTENT : 13 % by volume |
