The cultivation of wines is an arduous and precise task, from which depends the quality of the crops and thus of our wines. Our very cautious methods of cultivation keep in the respect of the soil and of the plants.
Ploughing enables the roots of the wines to be dug deeply in the soil (more than 10m) so that the plant draws all the necessary nutrients for its development. It also enables limitation, if not complete overriding of the use of pesticides as well as airing of the ground.

On the domain, we cultivate 2 well-known grapes :
The GAMAY for the red wine, and the CHARDONNAY for the white wine.
The grape is a type of vine plant, which is determined by its genetic characteristics, such as its leaves and the shape of its bunches.

Our vines are aged from 10 to more than 100 years, this brings in a wide variety of aromas in our wines and gives them their uniqueness.
 
Each plot is worked according to its topography, its age and its soils.The grapevines producing the red wine are pruned following the “gobelet” method and those producing the white wine are pruned using the “guillot” method.

The “gobelet” pruning method is the traditional Beaujolais’s way of pruning. This method used during the winter months enables a controlled growth of the plant and thus the produced grapes’quality.
The "guillot" pruning method is the most used in the Burgundy region. It is appropriate for the Chardonnay as it is limiting the plant’s vigour and allows for high quality grapes.

Harvesting is entirely done by hand. This enables a thorough selection of the most mature grapes and also keeps them whole and damage-less. This approach is essential to ensure the quality of the vinification process - which will follow- and to obtain a rich and fruity wine, as in keeping for the region style.
